There are few things I enjoy more than having friends over for dinner. I’m happiest when my dining table is surrounded by friendly faces and I adore evenings filled with good food, great conversation and plenty of cocktails.
While I relish the opportunity to prepare a proper three course meal, I also like to keep things as simple as possible. When House of Fraser asked me to create a recipe using the margarita glasses from their Linea range {currently reduced to just £17.50!}, this delicious dessert was an obvious choice.
These Margarita Creams are incredibly easy to make and they’re guaranteed to impress your guests despite the minimal effort involved. I particularly enjoy serving these at the end of a relaxed meal with a Mexican vibe. Think Mexican Lasagna, veggie fajitas or Slow Cooker Black Bean Enchiladas. Messy food FTW!
If you would prefer to omit the booze from this pud, simply replace it with the juice of an extra lime. In a pinch, this can also be made with ‘plastic’ lime juice from a squeezy bottle.
You will need:
- 60ml lime juice {2-3 limes}
- 1 tbsp tequila
- 1 tbsp triple sec or Cointreau
- 75g icing sugar
- 300ml double cream
1. It’s the sugar rim that transforms this simple pud into something special, so start by reading this How to Rim a Margarita Glass tutorial. I combined edible holographic gold glitter with golden caster sugar to create a sparkling finish, but you could also use coloured sugar crystals or a mixture of lime zest and granulated sugar.
2. Stir the lime juice, tequila and orange liqueur together in a large bowl, then whisk or fork in the icing sugar and let it dissolve in the boozy liquid.
3. Slowly whisk in the double cream until you have a light, floaty, aerated mixture. Carefully spoon the margarita cream into your glasses, dust with lime zest and serve.
